Learn how to select, store and prep fresh garlic from your grocer. Look for a plump bulb that’s skin is bright white, even colored and blemish free. The outer paper-like skins should be unopened, tight and intact without cracks. Squeeze the bulb, it should feel nice and firm. Turn over the bulb and look on the bottom for black/brown discoloration as this indicates mold. Reject ones that have green sprouts, they are over ripe and bitter tasting. Store in a dark, dry, cool area with ample ventilation, refrigeration is not recommended. A bowl with tin foil poked with holes for ventilation works just fine, or you can purchase a fancy garlic keeper. Sunlight will cause sprouting.
