How Do You Season Vegetables For A Roast?
Just about everyone enjoys sitting down to eat a delicious roast after a long day of work. Properly seasoned vegetables can make your crock pot roast even more fabulous. Wash and cut up some potatoes, carrots and onions in big chunks. Some people like to use zucchini or squash, as well. Slice potatoes into 3/4-inch thick rounds, preparing enough to cover the bottom of the crock pot. Form a bed at the bottom of the crock pot using the potato slices. Sprinkle some kosher salt and grind fresh pepper on the bed of potatoes. Use seasoned salt substitute or garlic salt if you’re cutting back on sodium. Use half of the remaining vegetables to form a layer over the bed of potatoes. Season this layer of vegetables with more salt and pepper. Place the prepared roast on top of the layer of vegetables. Rub some fresh rosemary, thyme or sage onto the roast for added flavor. The herbs will infuse their flavorings throughout the vegetables, as well. Arrange the rest of the vegetables so that they cov
