How Do You Sauté A Summer Squash & Zucchini Medley?
This is simple recipe for enjoying the summer squash and zucchini that are plentiful this time of year. By combining the yellow squash and the green squash with the tomatoes, you have a very tasty and colorful veggie dish to use as a side dish or over linguini. Rinse Summer squash and Zucchini, dry and slice into rounds or ovals approximately 1/8 inch thick. You may also slice into slivers if you prefer. Heat large fry pan to High/Med High and place squash in fry pan, cover with the olive oil, and turn squash to evenly distribute the oil. Turn the heat down to Med High and allow the squash to sauté to medium soft wilt. Add the onion rings. Sauté all until onions are translucent, then add the tomatoes. Sauté for a little while longer tossing all veggies and adding salt and pepper to taste and even a few red pepper seeds if desired.
