If you have a gas or charcoal cooker that has a spit attachment, you can roast a turkey in a couple hours. The meat is flavorful and there’s no mess to clean in the house. Plus, the oven is then available to cook any other goodies you want to go with the turkey. Wash the turkey inside and out. Pat it dry with a paper towel. Grease the bird well inside and out. You can stuff it now if you like, but generally stuffing is safer if you cook it in the oven in a separate dish.
