How Do You Roast Potatoes And Other Vegetables On A Grill?
Peeled or unpeeled, potatoes roasted on the grill are a great companion for grilled meat or poultry. In fact, you can roast potatoes and other vegetables on a grill right beside a rotisserie chicken. Just remember to place the chicken to one end of the spit, making room for the potatoes on the opposite side of the grill. You can peel the potatoes if desired, but leaving the skin on provides more nutrients. Wash, then dice the potatoes to about 1 inch cubes.
