“We’ve boiled our pasta for about 12 minutes now and now we are going to drain it off and cool it so we have our colander set up. I am just going to pour the macaroni into that and then we are going to rinse it with cold water so I am going to put some cold water back into the pot and pour it over our pasta. The reason we do this is we want to stop it from cooking. You don’t want your pasta to be hot and to continue to cook because by the time you are ready to put it in the sauce it will be over cooked.
