It makes for a quick convenient side for a midweek dinner when you don’t have much time to cook, but often the rice has dried out and isn’t very appetizing when microwaved. Here’s a simple way to make it soft and fluffy again Put the leftover rice in a microwave safe dish. Sprinkle a little water on it and mix. The amount of water should be enough to just moisten the rice without getting it soggy. Cover the rice and microwave for a couple of minutes. Take out, stir and put back in microwave again. Repeat the previous step one or two more times, sprinkling a little more water on the rice if it appears too dry. When the rice is steaming and fluffy, it is ready to eat!
