How Do You Recalibrate An Instant-Read Thermometer?
Look in the breast pocket of almost any pro chef and you’ll see one: an instant-read thermometer. This indispensable piece of kitchen equipment comes in two forms: digital and dial face, the latter of which will usually require recalibration at some point. Recalibration is a quick and easy process once you know how to do it, and since your instant-read thermometer just may be the only thing standing between you and the ruining of a $20 cut of meat, it’s a good idea to check its accuracy now and then. Read on to learn how to recalibrate an instant-read thermometer. Bring a pot of water to a rolling boil over high heat. For best results, have at least 4 inches of water in pot. Insert the dial-face instant read thermometer into the loop at the very top of the pocket clip. (Some sheaths will have a hole for this purpose; slide the thermometer into the hole if this is the case with yours.) Lower the metal end of the thermometer into the boiling water until just past the dimple on the stem.
