How do you read an MRI and IR spectrum on a given compound?

By MRI, I think you mean NMR?? In order to “read” a spectrum simply look at the location of the peaks and the shape/intensity. In the case of IR the values will be in cm-1. Certain values correspond to various functional groups. Here is a good run down of the typical values and their related functional groups: http://www.sou.edu/chem/ch340_00/Spec%20… In the case of NMR it is a little bit more complicated, since both the postions, the intensity (integration), and the multiplicity (splitting) all give information about the compound being analyzed. But again the basic positions of the signals are read off of the spectrum and usually expressed in terms of ppm.
