It is a great choice for a low fat, low carb or vegetarian diet. Purchase a spaghetti squash at a farm stand or in the produce department of the supermarket. Slice squash lengthwise and place both halves upside down in a microwave-safe baking dish. Microwave on high for 5-7 minutes, depending on the size of the squash. Preheat the oven to 400 degrees. Saute garlic for a few minutes in olive oil. When the squash is finished, scrape out the flesh with a fork, making “spaghetti” strands. (Do not throw out the squash skins.) Mix the strands with the olive oil/garlic. Place the squash skins on an ungreased cookie sheet. Divide the oiled strands into the two squash skins. Top each with half the tomato sauce and half the cheese. Place in over for 10 minutes, or until cheese is melted.
