How Do You Prepare Veal Parmigiana?
A good veal dish is hard to find. And can be expensive. But if you crave authentic Italian style veal parmigiana, the following recipe is mouth watering. Happy eating! Use a cutting board and lay one cutlet on it. With the meat tenderizer, using the side that has teeth pound the cutlets on both sides until the meat has tenderized (You will see impressions of the mallet teeth in the meat). Set aside and continue with the rest of the cutlets one by one until they are all done. Next in two separate dishes pour flour in one and bread crumbs in the other, add Black pepper to the crumbs (If your dishes are too small Use bowls to put your flour and crumbs). Dredge each cutlet in the flour on both sides and submerge in the eggs. When all your cutlets are done this way: One at a time coat them with bread crumbs and pat softly until both sides are covered with bread crumbs, continue until all your cutlets are covered this way. Fill pan with 1/2 inch of oil and heat on high. Use a Fry thermometer
