This a good prepare ahead meal for a barbecue with friends or work mates. I have prepared this dish on both occasion’s and it was a big hit. This dish provides 8 servings so don’t worry about second’s. Step 1 Rub chicken with lemon juice and garlic. Step 2 Combine salt, paprika and pepper and sprinkle over skin. Step 3 Place skin side up on wire rack(s) set over baking sheet(s) and refrigerate uncovered at least 8 hours or, preferably, overnight. Step 4 Preheat oven to 300 degrees F. Bake chicken 1 hour. Step 5 Meanwhile, prepare charcoal. Step 6 Transfer chicken to barbecue and grill, turning occasionally, until meat is done and skin is crisp, about 15 minutes per side. Step 7 Cut in half and arrange on platter.
