How Do You Prepare Stuffed Brinjal?
Basically this is a south indian preparation done in the godavary districts of Andhra Pradesh. • Take 250gms of brinjal preferably round and of small variety. • Split into 4 keeping the stem in tact and soak in salt water for ten minutes. • Heat half spoon of oil and add 2 spoons split black gram . • 1 spoon jeera, 4 or 5 red chillies ,little hing, half spn bengal gram a little fenugreek seeds called methi,1 spoon dry coriander called dhania and fry them . • And make it into a powder using mixie. • Remove brinjals from water and stuff the powder in them. • Heat 4spoons of oil in the same thick fry pan again and put all the stuffed brinjals in them . Cover them with a saucer type plate and put little water on the plate. • Cook for 5, minutes turn brinjals delicately and continue the process till they are done. Finally transfer to a bowl and serve with hot rice.
