This Skinny Tortilla Soup recipe is excellent if you are trying to slim down and lose some weight. It is great for lunch, or as part of a low-fat dinner. If you are on the Weight Watcher plan, this soup would count as 3 points for your one cup serving size. In a large saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add 1 cup cheese; cook and stir over low heat until melted. Crumble half of the tortilla chips into soup bowls. Ladle soup over the chips. Top each serving of soup with two crumbled chips.
