Preparing seed potatoes for planting is a simple task and can be done in very little time. Determine the number of seed potatoes you will need. Figure approximately four pounds per person. With a sharp knife, cut the potato in half. Take one of the halves and cut it into half. Look for the eyes (little indentations) on the potato. Cut the quartered potato so that each piece will contain at least one eye. Continue until all potatoes are cut. Lay out the potatoes evenly, not touching, on newspaper in a dry area and allow them to heal over. Allow the potatoes to ‘heal over’ for at least 24 hours before planting.
