This is a very easy and delicious recipe to make for guests. It is not expensive and the results appear that you’ve been slaving in the kitchen all day! You can make this recipe a few hours ahead and warm up when guests arrive. The extra time letting the flavors blend makes the dish even better! In a large frying pan, sauté garlic, onion and mushrooms in olive oil. Add 1 can of clams with juice. Drain the other can, reserving juice, and add the clams to the mixture. Stir well. Thaw spinach and squeeze out the juice before adding to clam mixture. Mix well with the other ingredients. Add drained olives, artichokes and Roma tomatoes. Add seasonings to taste and cover the pan. Let simmer for a few minutes until tomatoes are wilted. Cook linguine according to package directions. Drain well and add to clam mixture, blending all ingredients well. If needed, add some of the reserved claim juice until mixture is of desired moisture. Taste for the yummy factor and adjust seasonings as desired. S
