How Do You Prepare Cultured Vegetables With Kefir Grains?
Kefir-cured vegetables are a food source that is rich in probiotics and vitamin C while low in carbohydrates. Unlike sauerkraut, which can take weeks to cure, the use of kefir grains encourages a quicker fermentation process with a minimal oxidation of nutrients, allowing the vegetables to maintain their nutritional value. Kefir grains can be purchased at health food stores or online. Remove the outer leaves from the cabbage and set aside. Cut the entire cabbage in half, removing its hard core with a knife. Shred the cabbage into strips that are approximately 1/4 inch thick. Using a mortar and pestle, bruise small amounts of the cabbage a handful at a time by pounding it until its juices have released. Reserve the pounded cabbage in a large bowl.
