How Do You Prepare Cheesy Chicken Enchilada Casserole?
Here’s an easy way to prepare chicken enchiladas with a south-west kick. The best thing I like about this recipe besides it being absolutely delicious, it requires less time and less mess in the kitchen than any other chicken enchilada recipe that I’ve ever made before. Sprinkle chicken breasts with salt & pepper, place in 4 qt pot, cover with water and boil for 15 minutes. Remove chicken, allow to cool, cut into cubes or shred with fork. Combine chopped onion, soups, chicken broth, cubed or shredded cooked chicken, & tomatoes w/green chiles into pan. Simmer for 5 minutes, remove from heat. In a 9 x 13 casserole dish sprayed with non-stick vegetable oil, place 2 corn tortillas side by side. Spoon sauce/chicken mixture onto each tortilla then sprinkle 1/3 of shredded cheddar cheese. Repeat layers with tortillas, sauce/chicken mixture, ending w/cheese on top. Bake in oven on 350 for 30 minutes until cheese is slightly brown.
