How Do You Prepare Butternut Squash Lasagna?
Lasagna is a fairly simple meal to prepare, the worst step is probably the dreaded clean up. This Healthy Butternut Squash Lasagna is a delicious alternative to more popular vegetarian lasagna dishes, and clean up is made easier, too, by using the same baking dish for 2 recipe steps! I recommend this recipe (which originated from my friend Karen) as a vegetarian main meal. Meat lovers, serve it as a side dish with a slab of ham. Young and old will enjoy this dish! (Serves 8 or more, full size portions.) Step 1 Preheat your oven to 425° and gather your ingredients: • One 2 lb butternut squash • Approx. 1/2 brown sugar with 2 T cinnamon (more or less to your liking) • 1 T olive oil • 4 C coconut milk • 1/2 C butter • 1/4 C all-purpose flour • Salt and freshly-ground black pepper, to taste • Dash each of cloves, nutmeg and ginger OR 1/4 t pumpkin pie spice • 12 pre-cooked / oven-ready lasagna noodles • 2 C shredded mozzarella cheese • 1 C grated Parmesan cheese • 9″x12″ lasagna or similar
