How Do You Prepare Beans In Raw Food Diets?
Beans are a great source of protein, but they contain enzyme inhibitors that you need to neutralize, either by cooking or some other means. When you cook beans you neutralize the inhibitors, but you also destroy many nutrients that are contained in the beans. Better methods of neutralizing the inhibitors are to germinate or sprout your beans, which neutralizes the inhibitors without destroying any nutrients. Nuts and seeds can also be germinated; seeds and almonds can be sprouted. Just remember their germination and sprouting times will be different. Step 1 To germinate beans: Using raw (dried) beans rinse thoroughly, then place in glass bowl or container and cover with purified water. Cover the container with cheesecloth or a clean stocking. Allow to soak for one day. Step 2 Rinse and drain the beans a couple of times. They are now ready to be used in any recipe that calls for them. Step 3 To sprout beans: Place germinated beans in a container for sprouting, making sure that they are
