How Do You Prepare Apple Cashew Salad?
The luscious combination of sweet and tart in this recipe make an appealing salad. Make the dressing first and chill for several hours before assembling the salad. SALAD INGREDIENTS: 1/2 head of iceberg or romaine lettuce 8 ounces fresh spinach 2 Granny Smith apples, diced (peel on) 1/2 cup shredded Swiss cheese 1 cup cashew pieces DRESSING INGREDIENTS: 3/4 cup granulated sugar 1 teaspoon salt 1 cup canola oil 1 1/2 Tablespoon poppy seed 1/3 cup white vinegar 1/2 Tablespoon finely diced onion 1 teaspoon dry mustard powder Combine all dressing ingredients in a container or jar with lid. Shake well. Refrigerate at least 4 hours before serving. When ready to serve, combine all salad ingredients in a large bowl. Pour the dressing over the salad and toss to coat. Serve and enjoy.
