Eggplants are versatile vegetables that are suitable for a light side dish, or substantial enough to stand alone as an entree. They are an easy-to-maintain addition to any garden, as long as they receive a lot of sunshine. They are part of the nightshade family, like tomato plants. If you plan to grow your own eggplants, it is best to start your seeds indoors, preferably on a sunny windowsill. Choose a nutrient-rich potting soil that lists calcium and vermiculite in the ingredients. If you have access to manure, bone meal or compost materials, combine this with your soil. If not, you can simply choose a potting mixture that contains organic materials. Choose a planter that offers plenty of drainage. Fill seven to 10 small planting pots with the soil and fertilizing materials. Place one seed on top of the soil in each pot.
