They won’t dull your knives, and you can prevent the wood from splitting by soaking it in mineral oil first. Cut out a piece of wood that is 14.5-by-11 inches and 1/2-inch thick. Rough-sand all sides of the wood with 80-grit sandpaper and a hand sander. Sand the wood again with 120-grit sandpaper. Sand your wood a third time, using 220-grit sandpaper, until it is very smooth. Wipe all of the dust off your board with a tack rag. Pour a generous amount of mineral oil onto a rag and rub it all over your cutting board. Let it sit for a day so the oil can fully soak into the wood.
