How Do You Pickle Hard Boiled Eggs?
Pickled eggs are low-carbohydrate foods that are popular in pubs and fish and chip shops, especially in the United Kingdom and parts of the United States. There is a wide variety of recipes to prepare the pickling solution, using various spices, seasonings and vegetables, such as beets. This recipe yields approximately 12 small to medium sized pickled hard boiled eggs. Place the eggs in a single layer on the bottom of a large saucepan. Pour water into the saucepan until it covers the eggs by 1 inch, and then cover with the lid. Place over medium-high heat and bring the water to a boil. Remove the pan from the burner as soon as it starts boiling, and then allow it to sit for 15 to 18 minutes, with the lid still in place. Fill a large bowl with water and ice cubes, and transfer the eggs to the bowl. Allow each egg to sit for one minute in the ice water.
