Weber gas grills with multiple burners offer users two basic ways to organize the grilling chambers for two styles of cooking. Indirect grilling–keeping the meat or poultry away from direct flames in the chamber–works better for meats that require longer cooking times over lower heat, such as ribs, roasts and briskets. Direct grilling, which means organizing the chamber so food sits directly over the flame, works better for foods that require high heat and faster cooking times, such as steaks, hot dogs and hamburgers. Open the lid, and coat the cooking grate with a thin layer of vegetable oil grilling spray. Ignite all burners and close the lid, allowing the grill to heat to about 400 degrees Fahrenheit. Wait at least 10 minutes to ensure the grill is keeping a consistent temperature, and adjust burner dials up or down as needed to achieve 400 degrees.
