How Do You Make Zucchini Cake (Bread)?
Whenever I plant a garden, it seems I am inundated with zucchini for a short period of time. We eat it fried, stewed, baked and raw in salads. But by far, our favorite is baked into bread! I try and make as much as I can over the summer and freeze a good bit so we can enjoy it all year round! Preheat oven to 325 degrees F (165 C). Grease and flour two 8 x 4 inch loaf pans. (I personally think Metal are best) In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt, nuts and raisins. Stir into the egg mixture. Pour into prepared pans. Bake for 60 to 70 minutes until a toothpick inserted in the center comes out clean. Allow to rest for ten minutes then turn out onto a cooling rack. We can never let them get all the way cool before they are sliced, buttered and devoured! If I have any loaves left over, I put them, unwrapped on a cookie sheet in the freezer for a couple of hours.
