How Do You Make Zephyr Corn Fritters?
Corn fritters fried in a skillet are a favorite summer meal at my house. These can be served with maple syrup for breakfast or eaten just so for lunch or dinner. Grate corn from cob and mix with egg yolks. Beat egg whites until fairly stiff. Fold egg whites in corn mixture. Add salt as desired. Fry corn fritters, like pancakes, in butter, lard, or shortening. Serve hot.
