• Cream the butter and sugar in a large bowl. • Add the other ingredients to the creamed mixture. • Mix well. Knead it a little. • Roll out the dough. Cut into circular or oval shapes (these are the traditional shapes). Press down with a fork to leave fork ridges on the top of the biscuit. • Arrange on a baking tray covered with baking paper. • Place into a moderate oven and bake until golden brown. This will be about 10-15 minutes. • Stick two cooked biscuits together using butter icing. Custard powder is often added to the butter icing mixture used for yo yo biscuits. Serve the same day.
