How Do You Make Yeast-Free, Dairy-Free Chocolate Haystacks?
This recipe probably gave someone a stomach ache as she ate the whole batch the day she got them! (And called for the recipe to do more!) Mix coconut, sugar, flour, and salt. Add egg whites and extract until blended. Grease and flour cookie sheets. (I prefer Parchment Paper.) Drop by tablespoonfuls onto cookie sheets. Bake in preheated 325 degree oven for 20 minutes or until done. Remove to wire rack to cool completely. Melt 10 oz. package of Tropical Source Semi-Sweet Chocolate Chips in saucepan over low heat. Dip coconut cookies halfway into chocolate, letting excess drip off. Refrigerate or let stand at room temperature on wax paper for 30 minutes or until chocolate firms.
