These have a slightly enchilada-ey comfort food taste and could be called Pizza-dillas. Preheat oven to 350 degrees F. Cover a baking sheet with foil. On top of foil, lay down 1 corn tortilla per desired serving. Spread pre-prepared tomato sauce atop tortilla rounds, sparingly (about 1 Tablespoon per round). Top each round with grated Mozzarella and then lighter toppings like thinly sliced pepperoni and thinly sliced red bell pepper or olive. Place in pre-heated oven for 5-10 minutes or until cheese is melted and golden bubbly. Remove from heat and let cool one minute. Cut gently into slices with pizza cutter, using fingertip or spoon back with other hand to hold tortilla in place. Serve for a main entree or snack and enjoy making a wheat-allergy sufferer smile!
