I came up with a fabulous, soft wheat-free easy-to-make banana bread several years ago when I thought I might be allergic to wheat. Turns out I wasn’t, but it’s still really good. It’s a very moist banana bread, that is also both wheat and dairy free. This would make a great addition to your meals or snacks for those of you on wheat free diets. This bread can also be made the vegan way, if you try the variation listed in Tips. To make your wheat free banana bread, combine the dry ingredients (3 flours, baking soda, and salt) into a bowl and mix well. Create a well in the center. Add the rest of the ingredients (except banana) and mix. Now add the banana last. Mix again. Make sure everything is mixed well. You don’t want any stray clumps of flour or baking soda sitting in your wheat and dairy free banana bread. With a rubber spatula, scrape the dough into a greased 13″x9″ pan. Bake for 30-35 minutes.
