I use frozen peaches in this recipe, but you can use fresh peaches if you have them available. Defrost your sliced peaches. Let the sliced peaches sit out in a bowl at room temperature for a half hour. In a saute pan add the 1/2 cup sugar and 1/4 cup water and heat over med-high heat. This will make simple syrup. You will know it is done when it coats the back of a spoon. Add your sliced peaches to the pan and heat over med high heat. Mix the corn starch and teaspoon of water. Whisk the corn starch into the sliced peaches and heat for ten more minutes. You will need to cook the corn starch for it to have the proper thickening value. Take the warm peach topping off of the heat and let it sit for ten minutes. Now serve your warm peach ice cream topping over ice cream or frozen yogurt.
