It is simple to make venison jerky in a smoker. Many use the tougher parts of venison to make jerky but using fresh portions of backstraps really makes for a flavorful treat. Venison is naturally lean and full of protein. There is little fat and it cooks up quite easily. Prepare the smoker. Place the charcoal in the bottom pan of the smoker and light it. Let the coals burn until they are white and ashy. This will take about 20 to 30 minutes. Place a pan of water in the compartment just above the hot coals. Do not overfill the water pan as it might boil over into the coals and put out the heat. Smoking the amount of venison held in a personal smoker does not require a lot of water. Season the venison.
