This vegetarian white chili is made with Morning Star Farms Chick’n Strips, which are not really made from chicken at all, but made from soy. They are tasty and healthy, high in protein, and low in fat. This recipe makes a big batch, and it reheats wonderfully. It also freezes well if you want to save some for another day. Dice the onion and red bell pepper. Saute them with the garlic in a small amount of olive oil in a large soup pot. While the onion, bell pepper, and garlic are cooking, cut the Chick’n Strips into small bite-sized pieces. When the onion and bell pepper are slightly softened, add the Chick’n Strips to the soup pot. Sprinkle liberally with cumin, onion powder, and garlic powder. Stir well.
