How Do You Make Vegetarian “Tuna” Salad?
Making delicious vegetarian choices doesn’t have to be expensive or difficult. This recipe uses everyday ingredients to make a substitute tuna salad. Serves two. Drain and empty the chickpeas into a medium bowl. Using a fork, smash the chickpeas to a chunky paste. Add vegan mayo OR hummus and soymilk and stir with fork until well blended. Add soy sauce, salt and pepper, carrots and celery. Mix together thoroughly. Serve on a green salad, in a sandwich or as a dip.
