Here’s a vegetarian version of Sweet Potato and Sausage Casserole that is easy to make. Tasty and nutritious, this casserole makes a nice accompaniment for any holiday meal. Assemble your ingredients. Preheat oven to 375° F. Generously butter a 1 ½ quart casserole dish. Peel the sweet potatoes. Cut them into 2-inch pieces. Cook in boiling water until tender.
