After becoming a vegetarian, Rice Crispy treats was one of the few foods that I really missed. Marshmallows contain gelatin which is made from animal hoof, so they are definitely not veggie friendly. Purchase marshmallow cream that contains no gelatin or natural flavor. Few companies mark the containers clearly as vegetarian-friendly, so you’ll have to read the ingredients list. Store brands such as Kroger and Solo are both gelatin free. If making for vegans, look for Ricemallow Cream in the natural foods section of your grocery store and use dairy free margarine. In a large stock pot, melt ΒΌ c. butter over medium low heat. Add marshmallow cream. Stir continuously until melted. Remove from heat and add
