Pancit is the Filipino version of Chinese Chow Mein. It is one of the most versatile and popular dishes of Filipino cuisine, and can be made with many different ingredients from pork to shrimp. I came up with this vegetarian version based on a recipe for Pancit Guisado that I found in Reynaldo Alejandro’s “The Philippine Cookbook”.
