Most dishes are served with a side of soup when it comes to Thai cuisine. This helps counterbalance heavier and richer dishes. This version is full of bold flavors that include kaffir lime leaves, sorrel, chili, lemon grass, and corriander roots. This recipe will serve up to 6 people. Pound the coriander roots, lemon grass, asafetida,and chiles to make a rough paste using a mortar and pestle, or process in a blender with a few drops of water. Boil the vegetable stock in a saucepan over full heat. Drop in the kaffir lime leaves and tomato and cook for 2 to 3 minutes. Add the spice paste, reduce the heat to a simmer, add the tofu and sorrel, and cook for another 2 minutes. To serve: Divide the soy sauce, extra chiles, lime juice and chopped coriander into large, deep, serving bowls, and pour the boiling soup over. Serve with hot, steamed rice.
