How Do You Make Vegetarian Gazpacho Soup?
In the summer months a nice cold bowl of vegetarian gazpacho soup is a great way to cool down while getting your vegetables. This recipe tastes great and is extremely good for you. Makes a wonderful edition to any meal even if you are not a vegetarian and is very easy to make. To start your vegetarian gazpacho soup you will need to cut your red bell pepper, avocado, red onion and English cucumber into very small dice. Chop the green onion, and basil. Seed and dice the roman tomatoes. In a serving bowl mix the juice of your limes, tomato juice, red bell pepper, avocado, red onion, green onion, English cucumber, basil, roman tomatoes, parsley, cumin and celery salt. For the last step to making this wonderful and very easy vegetarian gazpacho soup you will need to season to taste with salt and white pepper. If the soup is a little bitter add some honey to taste to sweeten it up. Serve chilled in chilled bowls. You can refrigerate for 3 days.
