This is an easy recipe for a tasty dish. This Indian dish is packed with vegetables and tons of flavor. Ingredients: 1 pkg puff pastry, defrosted & chilled 1 potato, skinned and diced 1 carrot, diced 2 cloves of garlic, crushed 1 onion, chopped 1 c. frozen peas olive oil 2 tbsp curry powder 1/2 c. chicken broth (vegetable broth can be used as well) 1 egg, beaten salt & pepper to taste Heat some olive oil in a large pan on medium high heat. Add the curry powder and stir into the heated oil. Add the onion and garlic and sauté until you begin to smell the garlic and the onions begin to soften. Add the potatoes, carrots, salt and pepper. Let cook for about 5 minutes. Add the broth. Cover and simmer for about 30 minutes. Once it has cooked for 30 minutes, add the peas and cover. Turn over heat and let set. Divide puff pastry into 12 pieces. Place a tablespoon of the vegetable filling into the center of each piece of puff pastry. Create a half moon shape covering the filling with the dough.
