This is a healthy dish, quick to assemble and a favourite of many. Pre-cook the rice. The rest is easy. In a large skilled, heat the olive oil. Add the celery, water chestnuts, scallions, and mushrooms. Cook, stirring, for 4 to 5 minutes. Stir in the rice. Salt and pepper to taste. Stir in the peas and sprinkle on the soy sauce, gradually, until you are pleased with the taste. Add the cooked shrimp and continue cooking until shrimp are heated through. Meanwhile, in a flat pan, melt the butter. Add the eggs. Add a sprinkling of salt and pepper, and cook over medium heat, without stirring until eggs are firm. Quickly cut the cooked egg into strips.
