Makes enough for a family of 4. 4 cups cold cooked rice 2 lightly beaten eggs 3 tablespoons rice wine or dry sherry 6 tablespoons peanut oil 1/2 teaspoon salt 1/2 cup frozen peas 1/4 cup light soy sauce 1 carrot cut into 1/2″ cubes 1 red bell pepper cut into 1/2″ cubes Combine the soy sauce, salt, and rice wine/dry sherry in a small bowl. Blend them well and set aside. Place your skillet over medium heat. When it begins to smoke add the 2 tablespoons of the peanut oil, and the lightly beaten eggs. Stir the eggs until the are firm but still moist. Transfer the eggs from the skillet to a bowl and break them into little curds. Set aside. Bring a quart of water to a boil in a saucepan. Add your carrots to the water and boil for 1 minute. Drain and rinse the carrots in cold water. Drain again and reserve them. Place a frying pan/wok on the stove at roughly medium high. When
