How Do You Make Vegan Gyros (Recipe)?
While living abroad, authentic gyros were my favorite lunchtime food. For those who have never eaten them, real gyros’ distinct flavor comes from lamb cooked on an open air spit, then shaved and sautéed, and served on flat bread with sauce. They were one of the few foods I missed after becoming a vegetarian, and after much trial and error recreated a delicious vegan version. (Look for non-veggies to gobble them up, too!) In bowl, stir together vegan sour cream and cucumber juice. Refrigerate. Heat olive oil in a large sauce pan. While oil is heating, drain and rinse beans thoroughly. Pat beans dry with towel. Add beans and onion to hot oil. Stir every few minutes to make sure beans do not stick to bottom of pan. Beans are done when the outside skin of the beans start to crack and crisp. Remove from heat. Microwave flat bread for 15-30 seconds or place on top of beans while they are cooking to warm. Fill flat bread with cooked beans and top with sauce, lettuce, and tomato. Recipe will m
