How Do You Make Vegan Curry Sauce?
Curry sauce is a flavorful, healthful vegan sauce that can be used on vegetables, beans, and grains. Curry is considered a healing food in Ayurveda, the traditional Indian system of medicine. Adding extra turmeric to the curry makes it especially healing. In a bowl, mix 1 tsp curry powder, 1/4 tsp turmeric, 1/8 tsp sea salt, 2 pinches cinnamon (optional). Heat 2 TBS light sesame oil over low-med heat. Add onions and a pinch of sea salt, and sautee for 5 minutes until soft. Add the cumin seeds. Sautee for 5 more minutes, then turn down to low heat. Add a few fresh ginger slices (optional), garlic and basil and sautee/stir for 30 seconds. Be careful not to cook the garlic or basil on too high a heat or for too long or they will burn. Add 2 more TBS oil, give it a minute to heat up and then take the pot off the heat and immediately stir in the curry mixture. Add a splash of soy sauce if you want, but use very sparingly.
