Press and drain your tofu block, and cut into a cyclinder using a cup the size of your muffins as a template. Then horizontally cut the cylinder into four rounds for your ‘eggs’. Whisk together the apple cider vinegar, olive oil, rice vinegar, soy sauce, garlic powder, onion powder, salt and pepper and pour into a baking sheet. Place the tofu into the baking sheet with the mixture, and coat both sides (plus the tofu scraps for snacking). Bake at 400 degrees for ten minutes on each side. Once ‘eggs’ are done, place cheese on top to melt. Prepare the sausage according to package instructions. Toast the english muffins, assemble, and enjoy!
