How Do You Make Vanilla Flavored Tiger Prawn Skewers?
Pan fried vanilla flavored tiger prawns on skewers. Great as a side dish or for appetizer. (1)Cut in half (length ways) the vanilla pod then scrape out the seeds with a knife. (2)Crush the cardamom pods and take out seeds. Crush the seeds. (3)In a microwave-proof bowl, add and blend vanilla seeds, cardamom seeds, sake (Japanese rice wine) or dry sherry, heavy cream to the softened butter. Set aside. Prepare 4 metal skewers or bamboo/wooden satay sticks. If using bamboo or wooden sticks, soak in water 15 minutes before use. Wash prawns and dry on paper towels. Discard the heads or reserve them for other recipes, such as shrimp stock, if you bought prawns head-on. Peel shells and devein. Dredge the shelled prawns in the vanilla sauce made in Step 1. Shake off excess before frying. Keep the remaining sauce. Heat a wok or skillet over medium-high heat with 1 cup corn oil.
