Vanilla sugar is one of my favorites because of its versatility. It can be used in any recipe that requires a combination of vanilla flavoring and sugar. While there are three main types of vanilla beans-Bourbon, Tahitian and Mexican, I prefer to use Bourbon vanilla beans because they are more flavorful and have a greater amount of aromatic seeds than the other two varieties. Premium Bourbon vanilla beans will have a strong aroma and oily skin. When purchasing vanilla beans, make sure the beans are in a glass container and you can see the quality. You should avoid beans that look dry and brittle or that have a gray or smoky color. Two Bourbon vanilla beans will make several pounds of vanilla sugar, for you can use the same beans multiple times as you continually replenish your supply of vanilla sugar.
