First you will need some plain yogurt, cucumber, lemon juice, garlic and parsley.

Add the cucumber to 8 oz of yogurt.  You will want to peel and seed the cucumber first. Use a vegetable peeler for the cucumber, then cut in half and then you can use a spoon to remove the seeds.  Chop this up finely or you can even use a grater to get it really smooth.

Mince a clove of garlic and add it to the mixture, then squeeze in the juice of half a lemon. Try not to get any of the seeds in.

Add some dried parsley and stir together.  You can also add salt and pepper to taste. 

Some people like to add dill or fresh mint in place of the parsley.

For best results, refrigerate overnight.
