Twice baked potatoes are a cheesy, delicious treat to make and serve. They will get lots of admiration at a dinner party, too. • Prepare your potatoes. Wash and dry off as many potatoes as you plan to serve, and count on each person eating 1-2 halves. Baking potatoes work best for this, such as a Russet potato. • Bake the potatoes at 350 degrees F until a fork or skewer inserted into the potato pierces it with no resistance and the skin is crispy. • Remove the potatoes from the oven and cut them in half horizontally. Then scoop out the flesh of the potato into a large mixing bowl. Add about 1-2 cups of whatever cheese you like (grated), depending on how many potatoes you have baked. Swiss or sharp cheddar cheese work especially well here, and make sure to reserve a small portion of the grated cheese for the top. Then add a little buttermilk, milk, or sour cream to thin it out a little bit. • Refill the potato skins with this cheese and potato mixture, then top with the reserved cheese.
